The Story Behind the Bean
Deep in the Bener Meriah regency of Sumatra's Aceh province, coffee is cultivated by members of the Gayonese ethnic group on small family farms averaging fewer than three acres. Seventy percent of these producers are women, whose livelihoods — and the traditional village life they sustain — are woven into every harvest.
What truly sets this coffee apart is its processing. After hand-sorting and fermenting overnight, the beans undergo Giling Basah — Indonesian wet-hulling — where the parchment husk is removed while the bean still holds moisture, then dried in full sun. This technique gives the raw bean its signature bluish hue and the bold, earthy depth that defines the classic Indonesian cup.
